Woah. I just took these out of the fridge and they are good. Real good. Less sticky than the non vegan variety but still good.
I don’t know about your city, but in Toronto, the May long weekend is picnic mania. Whether it is Toronto Island or Trinity Bellwoods Park, this is the first weekend where you can fill up your coffee cups with beer and pack up some sandwiches. Enter the perfect picnic dessert, the rice krispie square.
I went a little overboard when I hit up Food Fight in Portland. Among my haul was Suzanne’s Ricemallow Creme Marshmallow Fluff so I was eager to use it. It worked like a charm.
2 tbsp. Earth Balance butter substitute
4 c. Rice Krispies
2 c. Suzanne’s Ricemallow Creme Marshmallow Fluff
1 tsp. vanilla
Melt the butter substitute in the microwave or on the stovetop.
Mix the melted butter, Rice Krispies, vanilla and fluff in a large bowl. It will take a bit of elbow grease to get the right consistency but not too much so you don’t break up the cereal.
Spray an 8X8 square pan with cooking spray. Spoon the Rice Krispie mix into the pan and flatten out the top. Cool for at least an hour. Enjoy a big old sugary bite.
