Chicken “Honey” Delight

This is the first recipe where I really, really had to change things up to make it as delicious as the original. My mom’s recipe instructed that the chicken be baked in the oven and basted for over half an hour. As much as I love Gardein, there was something a little soggy seeming about a basted piece of Gardein. Bluch.

So instead of ending up with a pale piece of plant protein in chicken’s clothing, I decided to throw it in a pan and fry that baby. It also takes a way shorter time. May your chicken tonight craving be fulfilled!

4 Gardein chicken scallopini breasts (defrosted if frozen)

flour seasoned with salt and pepper

1/2 c. organic Earth Balance

1/2 c. agave nectar

2 lemons, one juiced and one sliced

1 tsp. Braggs Liquid Aminos or soy sauce

Dredge chicken in flour and put in a casserole dish. Heat a splash of oil in a frying pan and cook the chicken breasts until golden on both sides.

While the Gardein chicken is cooking, melt the Earth Balance in a saucepan. When melted add the agave nectar, lemon juice and Braggs or soy sauce then bring to a boil.

Slowly pour over the chicken so as not to disturb the  flour too much. Cook until the sauce is a little sticky and coats the chicken breast. Top each piece of chicken with a slice of lemon.
